Paul Childerley has a date with a deer which can’t be missed. He booked in to join top game chef and senior lecturer at Westminster Kingsway College, José Souto, on the stage at the 2023 Game Fair at Ragley Hall for a deer butchery demo . No deer, no demo.
One of the issues he will face is the recent wet weather. The crops are yet to be cut so more than likely he won’t be able to take a body shot. He’ll have to take a neck shot, which is not for the inexperienced.
To ensure success, Paul has arranged two roe buck outings, one with José and one with Will Hogan from gunshop J Hogan and Son. Will is now distributing the New Zealand outdoor clothing brand Swazi into the UK and Ireland, and Paul is their latest recruit. He’s working alongside them to develop products to suit the UK and European markets. Plus there’s history with Paul and Will. Both were underkeepers working for Paul’s father, Martin Childerley, who tells us about the young keepers. Plus, Will let’s us know about his “character building” experiences with Childerley senior.
